Sweet shortcrust pastry biscuits

There come in all sorts of types, tastes and shapes, and they are one of the most appreciated treats ever. Coffee biscuits: that little indulgent pleasure, to satisfy the desire for delicacies.
Ingredients
  • 10 g ground coffee
  • 300 g flour type 00
  • 150 g butter
  • 100 g icing sugar
  • 1 egg
  • 1 egg yolk salt
Preparation
For the sweet shortcrust pastry

Work the sugar with the butter until creamy. Make a well in the flour, sprinkle with ground coffee and place the butter with the previously mixed sugar into the centre. Then, add the eggs and the yolk in the well. Start mixing the ingredients, combining them slowly. Knead until you obtain a smooth pastry, and let it rest in the fridge for about an hour.

Baking the biscuits

Roll the pastry with a rolling pin on a chopping board, until it’s as thick as you want the biscuits to be. Cut out the biscuits using kitchen cutters. Have fun picking the shapes! Next, put them on baking paper and bake at 180°C for about 10/12 minutes
